In large mixing bowl, cream together:
3 cups sugar
1 cup (2 sticks) butter, softened
Add:
1 can (29 oz.) Libby’s Solid Pack Pumpkin (don’t use generic)
2 eggs
2 tsp. vanilla extract
Mix until smooth.
In separate bowl, combine:
5 cups flour
2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. pumpkin pie spice
1 tsp. salt
Gradually add dry ingredients to creamed mixture. Drop by rounded tablespoons onto greased baking sheet.
Bake at 350 degrees for 15-18 minutes. Cool on baking sheet for 2 minutes; remove to wire racks to cool completely.
Optional: Drizzle glaze over cooled cookies.
Glaze Recipe
2 cups sifted powdered sugar
3 Tbsp. milk
1 Tbsp. melted butter
1 tsp. vanilla extract
Mix together in small bowl until smooth.
