Mini Cheesecakes

12 vanilla wafers
2 pkgs. (8 oz.) cream cheese
1/2 cup sugar
1 tsp. vanilla
2 eggs

Line muffin tin with cupcake liners. Place one vanilla wafer in each liner. Mix cream cheese, sugar and vanilla on medium speed until well-blended. Add eggs. Mix well. Pour over wafers, filling 3/4 full. Bake at 325 degrees for 25 minutes. Remove from pan when cool. Chill. Top with your choice of fruit or sundae toppings. Keep refrigerated until ready to serve. Makes approximately 12 mini cheesecakes.

Note: You can use the mini tart pans, mini baking cups, and mini vanilla wafers. Bake at 350 degrees for 17 minutes. Makes approximately 48 bite-size cheesecakes,
