No-Fail Rolls

1/2 cup sugar
2 cups reconstituted powdered milk (mix with hot tap water)
2 Tbsp. yeast

2 eggs

5 cups bread flour
1/2 cup canola oil
2 tsp. salt

In large mixing bowl, combine sugar, milk, and yeast. Let sit for 5 minutes. Add eggs and mix well. Using dough hook, add one-half of the flour. Mix well. Add oil and salt. Mix well. Add remaining flour. Mix well.

Spray large bowl with non-stick cooking spray and put dough in bowl. Cover with damp dish towel and let rise 45-60 minutes. Punch dough down and let rise an additional 45-60 minutes.

Preheat oven to 350 degrees. Spray non-stick cooking spray on baking sheet. Roll dough out on floured surface, cut out rolls (I use large canning jar lid), brush with melted butter and fold in half, pinching seams. Put on prepared baking sheet (4 across, 8 down); Let rise for one hour.

Bake at 350 degrees for 16 minutes. Lightly brush tops with melted butter. NOTE: This recipe also works really well for cinnamon rolls.
