2 T. oil (peanut or canola)
2 eggs, slightly beaten
1/2 lb. pork or chicken, sliced thin
2 cups instant rice
1/4 cup soy sauce
2 green onions, diced
2 cups water
In large skillet, cook eggs to a soft scramble with 1 tablespoon oil. Remove from skillet and set aside. In the same skillet, saute pork or chicken in remaining tablespoon of oil and cook until done. Add rice to skillet and saute for 2 minutes. Add onions, soy sauce and water. Bring to a boil, cover and remove from heat. Let stand 5 minutes or until water is absorbed. Stir in cooked egg and serve.
