1-1/2 cups instant rice
2-1/2 cups milk
1/4 tsp. salt
1/4 tsp. cinnamon
1/2 cup sugar
2 eggs, well beaten
1/2 tsp. vanilla
1/2 tsp. nutmeg
Combine rice, milk, salt, cinnamon and sugar in saucepan (I use non-stick pan). Bring to a boil, stirring constantly (I stir frequently when I use non-stick pan but I have to stir constantly when I use stainless steel). Reduce heat and boil slowly for 15 minutes. Remove from heat. Temper in the egg, stirring until well blended. Stir in vanilla and nutmeg or use the nutmeg as a garnish in individual dessert dishes.
